2012 Skin X Bones Cabernet Sauvignon
What it tastes like to us...
Making wine isn’t a lifestyle, it’s a life’s work. Farming a vineyard is not for the faint of heart, or for people who want to sit around and sniff wine all day. It’s physical, work-your-fingers-to-the-bone physical. The 2012 Skin X Bones celebrates the less cerebral side of winemaking, with luscious purple and black fruit, notes of espresso and chocolate, and the brown spice characteristics typical of French oak barrels. It’s got a come-hither satin-y smooth mouthfeel too, from all that tight-grained wood. Drink it or age it. Just be sure to get your skinny hands on it before someone else does.
What Mother Nature delivered...
If you look up “Napa Valley 2012 Vintage” in the dictionary you’ll find the words “classic,” “perfect,” and “ideal.” Just kidding. The dictionary doesn’t have that listing, but those words do describe the ’12 vintage. Every day that growing season we woke up, looked at the sky, and said “another perfect day in Napa Valley.” Sure there was a drought, but the long stretch of warm days and cool, foggy nights let the grapes do what they do best. Who are we to complain?
What we did then...
Handpicked, hand sorted the grapes, then slipped them into a stainless tank where they did a “cold soak” for four days – something we do to bring out the color without the influence of alcohol (plenty of time for that later). We aged the wine for 22 months in a solitary French oak barrel, racking it three times from barrel to barrel. The wine was bottled without fining.
